Coffee lovers, this is what you've been waiting for. If you love to try new coffees and are always looking for something new and exciting, we have subscription for you.
Each month we will roast a new coffee. The catch, we are only doing ONE ROAST of it. Once it's roasted and sold out, it's not coming back. It's going to be an exciting and adventurous coffee each time and will include a brew guide on how we recommend to brew it.
For May 2026, we have a coffee produced in the mountainous growing regions of Timor-Leste. This coffee reflects the resilience, tradition, and craftsmanship that define one of Southeast Asia’s most distinctive coffee origins. Cultivated by smallholder farmers in high-elevation communities, the coffee benefits from fertile volcanic soil, cool mountain climates, and slow cherry maturation that contribute to exceptional sweetness and balance in the cup. Careful harvesting and processing practices preserve the coffee’s natural complexity while highlighting the unique terroir of Timor-Leste, resulting in a clean and expressive profile that showcases the dedication of the region’s producers.
In the cup, this coffee offers a layered and approachable profile with notes of bright citrus, soft cocoa sweetness, and subtle floral complexity. The acidity is lively yet balanced, complemented by a smooth body and lingering sweetness throughout the finish. As the coffee cools, deeper chocolate tones and delicate fruit characteristics continue to emerge, creating a refined and nuanced cup that reflects both the quality of the processing and the distinctive character of Timor-Leste coffee.
